Almond Cookies!

Now, I’m a huge fan when it comes to cookies. I love em! The hardest thing I’ve ever came across is cookie recipes that are nice and vegan – because everyone I have tried has tasted horrible, never risen or cooked right, ya know? I found this recipe whilst reading through Poppy Deyes’ blog and lemme just tell you, when I tried it it was beautiful! So let’s get straight to it yeah..

You will need:
150g rolled oats
100g buckwheat flour
1 tsp bicarbonate of soda
1tsp sea salt
120ml maple syrup
90ml cold-pressed olive oil
250g almond butter
90g tahini
1/2 tsp vanilla extract
75g blueberries

You don’t always have to use almond butter, you could use any kind of butter you have, like any nut butter or just ordinary vegan butter! 🙂

RECIPE:
Step one: Preheat your oven to 180 degrees or gas mark 4 and then line your baking tray with baking paper or whatever you have. Then grind your oats into a coarse flour using a food processor or by hand. I did it by hand because I have no food processor and lemme tell you, it took a while so please remember that when choosing your method. Mix with the buckwheat flour, salt, and bicarbonate of soda in a large bowl.

Step two:Heat your olive oil, almond butter, maple syrup, tahini and vanilla in a saucepan over a medium heat. Stir until smooth and combined! It takes around 10 ish minutes I’d say and you need to 100% stir continuously! Don’t leave it to burn and sit still.

Step three: Pour the melted mixture over your flour mixture, pop your blueberries in and fold together carefully until combined. Make sure you don’t mix it, as the mixture won’t sit correctly and will therefore not bake correctly either.

Step four: Shape your dough into small balls and then place onto your baking tray. Leave a lil space between them because otherwise, they may spread and join together. Press down on each one gently with the back of a fork to create a more “cookie” like shape. Alternatively, you could just leave them natural, but they will be quite thick and small.

Step five: Bake for around 10-12 minutes (it took me around 15 minutes because my oven is a lil broken lol) and leave them to cool! It’s important to leave them because they will be a lil fragile whilst warm. BUT YES ENJOY!!!
